My favorite dairy promotion is working in the ice cream trailer at Juniata County Fair. Did you know milk only travels approximately 250-300 miles from the farm to a store and only takes about 48 hours to arrive at the store, so you can be assured your milk is fresh and healthy this holiday. One of my favorite dairy recipes is homemade holiday eggnog. Here below is the ingredient list and instructions:
Holiday Eggnog 6 large egg yolk 2 cups whole milk 1/2 teaspoon ground nutmeg Salt 1/2 cup granulated sugar 1/4 teaspoon vanilla extract 1 cup whipped cream, heavy Combine egg yolks and sugar in a medium bowl and whisk until fluffy. Set aside. Heat whipping cream, milk, nutmeg and salt in a saucepan over medium heat and bring to a low simmer, stirring occasionally. Immediately remove from heat. Gradually add the milk mixture to the egg yolks, one spoonful at a time, whipping vigorously after each addition, until the egg yolks have been tempered. Once most of the milk has been added to the egg mixture, pour the rest in and transfer the eggnog back to the saucepan. Return saucepan to the stove and simmer over low heat, whisking constantly, until the mixture begins to thicken (1-2 minutes total). Strain the eggnog through a fine mesh sieve into a serving pitcher or bowl. Add the vanilla extract, cover the container with plastic wrap and refrigerate until chilled. Serve over ice, with a garnish of ground nutmeg, cinnamon and fresh, seasonal herbs if desired. |
Hi! My name is Ella and I am a Juniata County Dairy Maid. I am “on the go” all the time! I am in 4-H, Girl Scouts, play several instruments, and play several sports. The recipe I am sharing is great for a busy schedule as it can be made up ahead of time and bakes in about half an hour when you are ready for it. It also has several dairy products in it! It is important for me to eat dairy products because the nutrients in milk keeps my muscles, bones, teeth, skin, and vision healthy. Also, the nutrients in milk releases energy from foods to reduce tiredness and fatigue. I get my three dairy products a day so I can keep up with my busy schedule!
Baked Spaghetti 1 box (8 oz) spaghetti, broken into 2-inch pieces 2 Tablespoon butter 1/3 cup Parmesan cheese 1 egg, well beaten 1 cup cottage cheese 1 lb. hamburg Chopped onion 1 jar (24 oz) spaghetti sauce 4 oz shredded mozzarella cheese Cook spaghetti; drain. Place in a 9 x 13 baking dish. Stir in butter, Parmesan cheese, and egg until mixed well. Spread mixture evenly in pan. Next, spread cottage cheese on top of spaghetti. Cook hamburg and onion; drain grease. Stir in spaghetti sauce. Spread over cottage cheese. Bake at 350 degrees for 30 minutes. Sprinkle mozzarella cheese over top and bake an additional 10 minutes or until cheese has melted. |

Cheese pie 1 cup graham cracker crumbs ½ cup butter 2 TB sugar 1 pkg dream whip 1 ½ cups powdered sugar 1 8oz pkg cream cheese 1 can prepared pie filling Melt butter, add crumbs and sugar. Spread in a glass baking pan 9x13 or 8x11. Prepare dream whip as directed on package. Set aside. Beat powdered sugar and cream cheese until smooth. Fold in dream whip and spread over crumbs. Spread pie filling over cream cheese mixture. Cool in refrigerator until ready to serve. |

Rice Krispie Treats - 3 Tablespoons butter - 5 1/2 cups mini marshmallows - 6 cups rice krispies cereal Instructions: 1. In a saucepan, melt butter. Add marshmallows and stir until completely melted. Remove from heat. 2. Add cereal and stir until well coated. 3. Using wax paper, evenly press mixture into a pan coated with cooking spray or parchment paper. Cut into 2 inch squares and serve. |

Buttermilk Brownies Softened butter, for the pan 1/2 cup (1 stick) unsalted butter, 1/4 cup unsweetened cocoa powder, 1/2 cup vegetable oil, 2 cups all-purpose flour, 1 teaspoon baking soda, 1/2 teaspoon salt, 2 cups granulated sugar, 2 large eggs, 1/4 cup buttermilk, 1/4 teaspoon vanilla extract. 1. Preheat the oven to 400°F. Butter a 9"x13" baking pan with softened butter, set the pan aside. 2. Heat the butter, cocoa powder, vegetable oil and 1 cup water in a medium saucepan over medium high heat. Bring to a boil Remove from the heat and allow to cool just until warm: set aside. 3. Sift the flour, baking soda and salt into a medium bowl. set aside. 4. Combine the granulated sugar, eggs, buttermilk and vanilla extract in a large bowl. Whisk to combine. Add the cooled cocoa mixture. 5. Add the dry ingredients to the wet ingredients and stir just until combined. Pour the batter into the prepared baking pan. 6. Bake for about 20 minutes or until a cake tester inserted into the center comes out clean. Frosting: 1/2 cup (1 stick) unsalted butter, 1/2 cup buttermilk, 1/4 cup unsweetened cocoa powder, 1(1 pound) box powdered sugar, (4 3/4 cups) teaspoon vanilla extract, Pinch of salt. 7. For the frosting, combine the butter. buttermilk and cocoa powder in a saucepan. Bring to a boil over medium high heat. Remove from heat. 8. Combine the powdered sugar, vanilla extract and salt in a large mixing bowl. Slowly add the buttermilk mixture to the sugar mixture, beating with an electric mixer on medium speed. Continue beating until smooth and creamy. Allow to cool completely. 9. After the brownies have cooled. spread the frosting evenly over the top. |
Cheese is my favorite dairy product! According to the International Dairy Foods Association, there are around 2,000 varieties of cheese in the world. This recipe has both of my favorite foods in it—potatoes and cheese! I like eating a baked potato with lots of butter and sour cream, but I found a new way to eat potatoes that I like just as much! Twice Baked Potatoes 6 baked potatoes, cooled and sliced in half 2 cups of shredded cheddar cheese 8 oz cream cheese 1 cup sour cream Bacon or bacon bits 1.Scoop potatoes out of skin being careful not to rip the potato skin. Place potatoes in large mixing bowl. Place potato skins in greased 9x12 baking dish. 2.Add 1 ½ cup shredded cheese, cream cheese, and sour cream to potatoes. Mix well. 3.Scoop potato mixture back into potato shells. 4.Add remaining of shredded cheese to top of potatoes. Top with bacon bits. 5.Cover with aluminum foil. Bake at 400 degrees for 30 minutes or until heated through and cheese on top is melted. |

Did you know it takes 12 pounds of whole milk to make 1 gallon of ice cream, 21.2 pounds of milk to make 1 pound of butter, 10 pounds of milk to make 1 pound of cheese. Chocolate Chip Cookie Cake
For the Cookie Cake:
- 8 Tablespoons butter, softened
- 1/2 cup light brown sugar
- 1/2 cup of sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 2 cups flour
-1 teaspoon salt
-3/4 teaspoon baking soda
-1 heaping cup chocolate chips
For the Frosting:
- 4 Tablespoons butter, softened
- 1 cup powdered sugar
-1 Tablespoon milk
-1/2 teaspoon vanilla extract
- food coloring of your choice
- sprinkles
1. Preheat the oven to 350*. Line a 9 inch round pan with parchment paper and lightly grease.
2. Melt and brown 2 tablespoons of butter over medium heat. Then transfer to a small bowl.
3. In a medium bowl, combine sugars, softened butter, and browned butter. Then add eggs and vanilla extract.
4. Add flour, salt, and baking soda and mix well.
5. Stir in chocolate chips, reserve some for the top of the cake.
6. Press the dough into the pan and top with the remaining chocolate chips.

● 1 ⁄2 teaspoon salt
● 1 ⁄4 teaspoon pepper
● 1 ⁄4 teaspoon smoked paprika
● 2 cups shredded chicken, cooked
● 2 cups broccoli florets
● 2 cups shredded cheddar cheese, divided
Instructions Melt butter in large shallow straight-sided oven-safe pan, such as cast iron 3.5 or 4-quart braiser. Add onion and cook just until soft. Add garlic and stir until combined. Stir rice into pot and sauté for one minute. Gradually stir in 2 cups milk, followed by chicken broth. - 1 cup plus 2 tablespoons of flour
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 1/4 cups M&M'S
- 1/2 cup sugar
- 1/4 cup packed dark brown sugar
- 1 egg
- 1/2 teaspoon vanilla extract
- 1 cup chocolate chips
- 1 cup confectioners' sugar
- 2 to 3 tablespoons whole milk
Preheat the oven to 350˚ F. Line the bottom of a 9 inch pan with parchment paper; butter the paper. Whisk the flour, baking soda and salt in a medium bowl. Roughly chop 1 cup of the M&M’S. Mix the butter, sugar and brown sugar in a bowl with a mixer on medium speed until fluffy. Whisk in the egg and vanilla. Add the flour mixture and mix until combined. Add the chopped M&M’S and chocolate chips and stir. Pour the dough evenly into the pan and smooth the top. Bake for 10 minutes, then remove from the oven and press the remaining 1/4 cup whole M&M’S into the top, evenly spacing them out. Return to the oven and bake until golden, 12 to 14 more minutes. Stuffed Venison Tenderloin
2 pounds of venison tenderloin (beef can also be used)
1/2 pound of bacon
8 ounce tub of cream cheese
Seasoning of your choice
Optional: Fresh jalapeño peppers
Cut a slit down the length of the loin to butterfly it open. Be careful not to cut through the entire piece. Flatten each side slightly with a meat tenderizer. Sprinkle with your favorite spices/seasoning. Cut a block of cream cheese into chunks and lay on the loin. Optional: Slice some fresh jalapeño peppers on top of the cream cheese. Fold the loin in half. Lay the bacon strips next to each other, then put the loin crosswise over the strips. Wrap the bacon around the loin, securing with toothpicks if needed. Place the loin on a slotted bake sheet with either a drip pan or aluminum foil to catch the drippings. Bake at 350 degrees for 30-40 minutes.

Many aged cheeses like Cheddar and Swiss contain little, if any, lactose, so if you are lactose intolerant, you may still be able to get the benefit of calcium and other nutrients that dairy products provide. One of my favorite ways to eat cheese is grilled cheese. Try these ranch grilled cheese sandwiches.

Ingredients:
2 slices of bread per sandwich

Blueberry Hand Pies
Makes eight 1-pie servings. Filling:
1 pint fresh blueberries,
1 tablespoon all-purpose unbleached flour,
3 tablespoons granulated sugar,
1/4 teaspoon pure vanilla extract,
1 large egg yolk, lightly beaten with 1 teaspoon water.
Crust:
2 store-bought ready-to-bake pie crusts for 9" pie.
Topping:
1/4 cup confectioners' sugar,
1 tablespoon reduced-fat milk.
Pair each serving with: 8-ounce glass of milk.
Instructions: 1. In a medium size bowl, toss blueberries with flour. Add sugar and vanilla extract and toss to combine. Set aside.
2. Allow store-bought crust to get to room temperature. Preheat the oven to 375°F. Line a baking sheet with parchment paper. Set aside.
3. Flour a work surface and roll pie crust to 1/4 inch thickness. Cut the crust into 8 rectangles about 3x4 inches in size. Scoop a scant 1/4 cup of the blueberries into the center of four of the rectangles of dough. Place the remaining dough rectangles over the top of each blueberry filling. Use a fork to seal the edges of each pie and transfer pies to the prepared baking sheet. Repeat the process with a second pie crust and remaining blueberry filling.
4. Pierce the tops of the hand pies with a paring knife a few times and brush with egg wash. Bake pies for 30 minutes or until the dough is golden brown. Allow pies to cool completely before icing and serving.
5. Use a fork to stir together confectioners sugar and 1 tablespoon milk. Drizzle over cooled hand pies. Serve with a glass of milk.

2 store-bought ready-to-bake pie crusts for 9" pie.
Topping:
1/4 cup confectioners' sugar,
1 tablespoon reduced-fat milk.
Pair each serving with: 8-ounce glass of milk.
Instructions: 1. In a medium size bowl, toss blueberries with flour. Add sugar and vanilla extract and toss to combine. Set aside.
2. Allow store-bought crust to get to room temperature. Preheat the oven to 375°F. Line a baking sheet with parchment paper. Set aside.
3. Flour a work surface and roll pie crust to 1/4 inch thickness. Cut the crust into 8 rectangles about 3x4 inches in size. Scoop a scant 1/4 cup of the blueberries into the center of four of the rectangles of dough. Place the remaining dough rectangles over the top of each blueberry filling. Use a fork to seal the edges of each pie and transfer pies to the prepared baking sheet. Repeat the process with a second pie crust and remaining blueberry filling.
4. Pierce the tops of the hand pies with a paring knife a few times and brush with egg wash. Bake pies for 30 minutes or until the dough is golden brown. Allow pies to cool completely before icing and serving.
5. Use a fork to stir together confectioners sugar and 1 tablespoon milk. Drizzle over cooled hand pies. Serve with a glass of milk.

Sheet Pan Buttermilk Pancakes
8 tablespoons melted butter, divided
2 3/4 cups all-purpose flour

2 1/2 cups low-fat buttermilk
1- 1 1/2 cups desired toppings (semi-sweet mini chocolate chips, peanut butter chips, butterscotch chips, sliced strawberries, blueberries, raspberries, sliced banana, chopped pecans, or flaked coconut)
Warm maple syrup (optional)
Cut-up fresh fruit (optional)
Whipped cream (optional)
Ice cream (optional)
Preheat oven to 425°F. Use pastry brush to spread 3 tablespoons of the melted butter on the bottom and sides of an 18- x 13- x 1-inch baking pan (half sheet pan). Set aside.

Sand Pudding
15 ounce package vanilla wafers
2 Oreo cookies
8 ounces cream cheese

1 cup milk
½ cup strawberry frozen yogurt
12 (3-ounce) plastic or paper cups
12 wooden craft sticks or 12 (2-ounce) freezer pop molds
Partially thaw the strawberries by leaving them at room temperature for 10 minutes or microwaving the unopened plastic pouch on high for 10 seconds. Place the partially frozen berries with liquid in a blender. Add the milk and frozen yogurt. Cover and blend until smooth. Divide among 12 cups or freezer pop molds. Place the cups in a 9x12 baking pan. Cover each cup with aluminum foil. Push a craft stick through the center of the foil to hold the stick in place while freezing. Freeze 3 to 4 hours.

I would say my favorite promotion is going to Headstart with the little kids because I just like being around little kids and seeing their faces light up when someone walks in. It’s a good thing I live in a state that is one of the top 10 milk producing states! During the past three years, Pennsylvania’s milk production has been steadily increasing, despite a decline in the total number of cows in the Commonwealth. In 2020, the state’s total milk production was 10.276 billion pounds, up 1.7% compared to 2019 with 8,000 less cows. I hope you enjoy these stuffed shells which contains lots of yummy cheeses.

A survey conducted by OnePoll for Farm Rich found the average person eats two meals and three snacks each day, totaling 21 snacks in a week. Snacks are most often enjoyed in the home and are chosen for convenience, variety, and to add extra fuel to the day. You can enjoy dairy products in your snacks to get your 3 servings of dairy a day. One of our favorite snacks are these Cream Cheese Roll Ups.
Cream Cheese Roll Up
Ingredients:
1 pound sliced Lebanon Bologna or Ham
8 ounces Cream Cheese, softened

With this take on this staple you will have the chance to add more dairy to your diet. Did you know that Americans are consuming 2 servings of dairy a day? Ham and Cheese Sandwiches
2 loaves frozen white bread dough, thawed
4 tablespoons cream cheese, onion and chives divided
8 ounces cheese, sliced Provolone cheese (10 slices)
1 pound sliced deli ham
1 egg white + water
Preheat oven to 400º F.
Dust counter with flour and roll one loaf of bread dough into a large rectangle (15"x12").
Spread 2 tablespoons of cream cheese down center of dough.
Lay 5 cheese slices on top of the cream cheese.
Layer 1/2 pound of ham evenly over cheese, down the middle of the bread dough.
Cut 4 slices into the dough, angling upwards on both sides of ham. Tuck bottom of the dough up, and then criss-cross dough over top of the ham and cheese until you have reached the top, then tuck bread dough in at the top. Place sandwich on a parchment lined baking sheet. (If you do not have parchment paper then make sure you grease your pan before baking.)
Repeat these 5 steps to make second Baked Ham and Cheese Sandwich.

Ham and Cheese Sandwiches
2 loaves frozen white bread dough, thawed
4 tablespoons cream cheese, onion and chives divided
8 ounces cheese, sliced Provolone cheese (10 slices)
1 pound sliced deli ham
1 egg white + water
Preheat oven to 400º F.
Dust counter with flour and roll one loaf of bread dough into a large rectangle (15"x12").
Spread 2 tablespoons of cream cheese down center of dough.
Lay 5 cheese slices on top of the cream cheese.
Layer 1/2 pound of ham evenly over cheese, down the middle of the bread dough.
Cut 4 slices into the dough, angling upwards on both sides of ham. Tuck bottom of the dough up, and then criss-cross dough over top of the ham and cheese until you have reached the top, then tuck bread dough in at the top. Place sandwich on a parchment lined baking sheet. (If you do not have parchment paper then make sure you grease your pan before baking.)
Repeat these 5 steps to make second Baked Ham and Cheese Sandwich.

Blueberry Cheesecake
Ingredients
1&1/2 cups fresh blueberries
1/4 cup sugar
1 tablespoon lemon juice
2 teaspoons cornstarch
1 tablespoon cold water
CRUST:
1 cup graham cracker crumbs (about 16 squares)
2 tablespoons sugar
2 tablespoons butter, melted
FILLING:
3 packages (8 ounces each) cream cheese, softened
1 cup sugar
1 cup sour cream
2 tablespoons all-purpose flour
2 teaspoons vanilla extract
4 large eggs, lightly beaten, room temperature
Directions
1. Preheat oven to 350°. In a small saucepan, combine the blueberries, sugar and lemon juice. Cook and stir over medium heat for 5 minutes or until the berries are softened. Combine cornstarch and water until smooth; stir into the blueberry mixture. Bring to a boil; cook and stir for 2 minutes or until thickened. Remove from the heat; cool to room temperature. Transfer to a blender; cover and process until smooth. Set aside.
2. For crust, in a small bowl, combine the crumbs and sugar; stir in the butter. Press onto the bottom of a greased 9-in. springform pan. Place pan on a baking sheet. Bake at 350° for 10 minutes. Cool on a wire rack.
3. In a large bowl, beat cream cheese and sugar until smooth. Beat in the sour cream, flour and vanilla. Add eggs; beat on low speed just until combined. Pour filling over crust. Drizzle with 3 tablespoons blueberry mixture; cut through batter with a knife to swirl.
4. Return pan to baking sheet. Bake for 40-45 minutes or until center is almost set. Cool on a wire rack for 10 minutes. Carefully run a knife around the edge of pan to loosen; cool 1 hour longer. Refrigerate overnight. Serve with remaining blueberry sauce. Refrigerate leftovers.

My name is Kera, I am the Juniata dairy maid. My favorite dairy promotion is handing out ribbons at the dairy shows. Dairy fact: It takes 12 pounds of whole milk to make one pound of ice cream. My favorite dairy recipe is apple, almond mixed green salad, and is made as followed.
Apple Almond Mixed Green Salad
4 cups assorted salad, greens, chilled
1 cup raisins or dried cranberries
1 apple
½ cup toasted almonds
1/3 cup sliced green onions

Bacon Ranch Cheese Ball
2 – 8 oz. cream cheese (room temp)
½ cup shredded cheese
1 cup bacon crumbs
1 pkg. Hidden Valley dry ranch mix
Place both cream cheese in a medium bowl and mix until combined. Add ranch mix and mix well. Blend in shredded cheese and ½ cup bacon. Once mixed form into a ball and then roll the ball in remaining bacon crumbles. Refrigerate 1 hour before using.

Cheesy Smashed Potatoes
5-6 Gold or Red-Skinned Potatoes
1/4 cup butter
1/4 cup sour cream
1/2 cup shredded mild cheddar cheese
1/4 tsp garlic salt
Wash potatoes and trim as needed, leaving most of the skin on. Cut into cubes and bring to a boil. Boil until tender, drain water. Use potato smasher to smash the potatoes by hand, then stir in the other ingredients.

Dairy Cream Casserole
1 lb. ground beef
1 or 2 cloves garlic
1 tsp. salt
1 tsp. pepper
1 tsp. sugar
2-8 oz. cans tomato sauce
6 green onions
1-3 oz. pkg. cream cheese, soften
1 C. sour cream
1 C. grated Cheddar cheese
1-16 oz. pkg. medium egg noodles.
Brown meat; add garlic, salt, pepper, tomato sauce and sugar. Cover and cook 20 minutes. Cook noodles. Chop onion and mix with sour cream and cream cheese. In greased casserole put in layer of noodles; spread with onion, cream cheese and sour cream mixture, then meat sauce. Put in layers with grated cheese on top. Bake at 350 degrees for 30 minutes in large casserole. Serves 4 to 6 people.

It’s a good thing I live in a state that is one of the top 10 milk producing states! In 2018 and 2019, Pennsylvania ranked seventh in top milk producing states, producing over 10,000 million pounds of milk each year. Cream cheese is another one of my favorites. I like cream cheese on a bagel or on a slice of vegetable pizza. Here is my recipe for vegetable pizza.

The next time you have a special occasion to celebrate, use this Ice Cream Cake recipe to make the celebration a special one, and also get your 3-A-Day of Dairy.
Ice Cream Cake
2 Boxes Junket Original Ice Cream Mix (flavors of your choice)
2 1/2 Cups Whole milk
1 1/2 Cups Heavy Whipping Cream
1 Pack Oreo Thin Cookies
Icing
2 Cups Heavy Whipping Cream
4 TBSP sugar
2 tsp vanilla
Mix one box of Junket Ice Cream mix with 1 1/4 cup whole milk and 3/4 cup heavy whipping cream. Stir until dissolved, then pour into 9” springform pan and transfer directly to the freezer. Freeze approximately 2 hours.
In the meantime, crush the Oreos in a food processor (or roll with a rolling pin in a plastic bag). Mix the second box of ice cream mix according to the above directions. Remove the cake from the freezer, sprinkle the Oreos on top, then pour the second batch of ice cream over the Oreo crumbs. Freeze overnight.
The next morning, make the icing by combining the heavy cream, sugar and vanilla extract in the bowl of a stand mixer. Using the whisk attachment, whip on medium-high speed until the cream is light and fluffy and holds a medium to firm peak, 2 to 3 minutes.
To release the pan, wrap a warm towel around the pan for about 30 seconds, then remove the sides of the pan. Add the icing and decorate with sprinkles if you wish, then return to the freezer until ready to serve.

Hello everyone! My name is Jordan Taylor and I’m one of your Juniata County Dairy Ambassadors for the 2020-2021 reign. This is my 14th year being in the Dairy Promotion Program. Some of you may think that’s a long time, and I agree with you, but time flies when you do something you love. During these uncertain times there is one thing that we can be certain of, milk. Milk has 9 essential nutrients that are very important to your everyday diet. Dairy farmers are working all year round to make sure that their delicious product can be enjoyed by many. As the dairy farmers are always working, it is my job to promote their amazing product to as many people as possible. A few ways that you can help the dairy industry are by having 3 servings of dairy a day, looking for the PA preferred label whenever buying milk, and thanking a dairy farmer for all that they do. One thing I enjoy doing is putting sliced strawberries or peaches in a bowl and pouring whole milk over top of them for a cool and refreshing snack, you should try it too! Stay safe and healthy!

Yogurt Pie
The ingredients you will need are ¼ cup of boiling water, a small box of sugar free jello, 2 small containers of yogurt (flavors of jello and yogurt should match), and 1 container of cool whip. My favorite is blueberry jello and yogurt. Mix all ingredients together and pour into a graham cracker crust.

Hi, my name is Ella. I am nine years old and I am a Dairy Miss for Juniata County. One of my favorite dairy products is ice cream! And one of my favorites is moosetracks! I like to eat ice cream all year long. Did you know it takes three gallons of milk to make one gallon of ice cream? And, did you know, the average cow makes eight gallons of milk in a day? That means every day, one cow can make almost three gallons of ice cream! I like that! When I have a snow day, I like to make ice cream at home. We make it from snow and we call it snow cream! Below is my recipe you can use to make your own snow cream. Now, we just need a lot of snow!
Snow Cream
1 ½ cups milk
1 cup sugar
1 teaspoon of vanilla
8-10 cups of freshly fallen snow
In a small bowl, mix the milk, sugar, and vanilla until well combined. In a large bowl, add about 8-10 cups of snow. Pour milk mixture on top of snow and mix well. It will be thinner like homemade ice cream is. Enjoy!

In a small bowl, mix the milk, sugar, and vanilla until well combined. In a large bowl, add about 8-10 cups of snow. Pour milk mixture on top of snow and mix well. It will be thinner like homemade ice cream is. Enjoy!

Brown Cow Cupcakes
FILLING
CUPCAKE

Crockpot Hot Chocolate
1/2 cup dry baking cocoa
12 oz can sweetened condensed milk
1/8 teaspoon salt
7 1/2 cups water
2 teaspoons vanilla
Instructions
Add all ingredients to a crockpot and whisk until smooth.
Cook on low for up to 4 hours or on high for up to 2 hours.
Serve when hot!

Pumpkin Ice Cream
1/3 cup unsalted BUTTER, melted
1 1/3 cups graham cracker crumbs
1/4 cup granulated sugar
3 cups VANILLA ICE CREAM, softened
1 cup pumpkin puree
1/3 cup light brown sugar, packed
1 teaspoon vanilla extract
1 teaspoon cinnamon
1 teaspoon pumpkin pie spice
REAL WHIPPED CREAM
Preheat oven to 350F and spray a 9-inch pie dish with cooking spray. In a large microwave-safe bowl, melt the butter then add the graham cracker crumbs and granulated sugar; stir to combine. Press mixture into prepared pie dish, hard packing it with your fingers and making sure to push the mixture up around the sides. Bake for 10 minutes; set aside to cool. There are more than 2,000 varieties of cheese across the world and approximately 10 pounds of milk is required to make one pound of cheese! National cheese month is in October. Cheese can go great with any casserole and especially lasagna. My favorite supper meal that my mom makes is lasagna which can help give you one of your three servings of dairy every day.
Lazy Lasagna
1 lb. ground sausage
2 Tbsp. brown sugar
1 (26 oz) chunky garden style spaghetti sauce
2 cups water
2 cups shredded mozzarella cheese
½ cup parmesan cheese
2 eggs
1 tbsp. dried parsley
¼ tsp pepper
9 lasagna noodles, uncooked.
Heat oven to 350. Brown ground sausage and add brown sugar. Add spaghetti sauce and water. Cover and simmer 10 minutes. Mix cheeses, eggs, parsley, pepper in bowl. Pour 1 cup sauce in 13”x9” baking dish. Arrange 3 uncooked noodles over sauce. Spread pasta with ½ cheese mixture. Top with 3 more uncooked noodles. Then spread remaining cheese mixture over pasta. Top with the last three noodles. Pour sauce over all. Sprinkle extra parmesan cheese on top. Cover tightly with foil. Bake 45 minutes. Remove foil and bake an additional 15 minutes. Remove from oven and let set 5 minutes before serving.

I like to help show cows with my Uncle, and I have a new baby calf at his farm, Her name is Lollipop! Helping in the ice cream stand at the fair and going to Locust Grove nursing home are two of the activities that I have helped with. According to the Center For Dairy Excellence, Pennsylvania’s annual milk production per cow is just over 20,000 pounds – or about 2,454 gallons – per cow. Traditionally it takes 12 pounds of whole milk to make 1 gallon of ice cream. I made blueberry ice cream in a non-traditional way using a recipe we found on delish.com. I hope you like it as much as we did.
Blueberry No-Churn Ice Cream
4 c. blueberries, plus more for serving

- Transfer to 9”-x-5” loaf pan and freeze until firm, 5 hours. Serve with fresh blueberries.

My two favorite dairy products, milk and yogurt, are great ways to add potassium to your diet. Dairy products can also be part of an occasional treat and can make your baked goods even richer and creamier. Banana Pudding
Crust:

Hull the strawberries and slice them into a bowl. Sprinkle the sugar over them and stir in the vanilla extract. Put the bowl of strawberries into the freezer for about an hour. Put two pint glasses (or four smaller glasses) in the freezer to chill, too.
When the strawberries have frozen solid, pull them out and put them in the blender with 7 oz. of the milk. Make sure you scrape in all the syrupy juice that has accumulated at the bottom of the bowl. Blend until the strawberries are pulverized.
Add the milk powder (if using) and blend.

The rougher they look, the better! Bake for 15-17 minutes, until the tops are golden brown. Using a kitchen brush, brush the tops with the butter mixture when they just come out of the oven.

Broccoli Cheese Soup
• one bunch of fresh broccoli
• 2 cups vegetable [or chicken] broth
• 1/2 cup of sharp cheddar cheese
• 1 heaping cup of regular gouda cheese
• 1 cup of shredded carrots
• 1 small white onion
• 2 large cloves of garlic, minced
• 1 cup half and half [or heavy cream], room temperature
• 3 TBSP all purpose flour
• 3 TBSP butter
• 1/4 tsp garlic powder
• 1/8 tsp allspice
• 1/8 tsp ground nutmeg
• 1/8 tsp dried basil
• salt and pepper to taste
1. Dice the onions, mince the garlic, and shred the carrots. Chop 2/3 of the broccoli into tiny florets and then take the remaining 1/3 and give it a rough chop so you have a few large pieces to add to the soup.
2. Add broth to a pot on medium-high heat; add broccoli as well as your onion, garlic, and carrots. Simmer on medium, covered, for about 15-20 minutes or until the veggies are tender.
3. Once the broth is done, start your roux: In a large pot, melt 3 tablespoons of butter on medium heat, whisking constantly. Once melted, slowly add 3 tablespoons of flour as you continue to whisk.
4. Remove from heat and slowly pour in the broth from your veggie mixture and stir to incorporate.
5. Next pour in the veggies and slowly stir in 1 cup of room temperature half and half.
6. Return to the burner on very low heat, uncovered.
7. Season with the above herbs and spices.
8. Once the soup has warmed back up, stir in the grated cheeses slowly and remove from heat immediately.

30 NILLA Wafers
3 medium bananas, sliced
For the Whipped Cream
· 1 cup cold heavy whipping cream
· 2 tablespoons sugar or honey
Begin by putting mixing bowl and whisk or beaters into the freezer for the whipped cream. Next, pour milk into a large bowl. Add dry pudding mixes. Beat with wire whisk 2 min. or until well blended. Let stand 5 min. Arrange half of the wafers on bottom and up side of 2-qt. serving bowl; top with layers of half each of the banana slices and pudding. Repeat all layers. Now, take your bowl and whisk/beaters out of the freezer. Pour heavy whipping cream and sugar into the cold bowl and whisk on high speed until medium to stiff peaks form, about 1 minute. Do not over beat. Cover the dessert with whipped topping. Refrigerate 3 hours

Believe it or not, skim milk has a higher level of potassium per serving than whole milk. Higher levels of potassium are proportionally related to lower fat content. One cup of whole milk provides 9% of potassium nutrient’s daily value. The same amount of reduced fat or low fat milk provides about 10% and nonfat milk is the highest by supplying 11% of the daily value. Goats milk provides even higher potassium levels at 14% of the daily value per one cup.

Here’s a recipe to start off your chilly fall morning and to help you get one of your three servings of dairy:
Amish Breakfast Casserole
Ingredients:
● 1 pound sliced bacon, diced
● 1 medium sweet onion, chopped
● 6 eggs, lightly beaten
● 4 cups of frozen shredded hash brown potatoes, thawed
● 2 cups shredded cheddar cheese
● 1 ½ cups small curd cottage cheese
● 1 ¼ cups shredded Swiss cheese
In a large skillet, cook bacon and onion until bacon is crisp; drain. In a bowl, combine the remaining ingredients; stir in bacon mixture. Transfer to greased 13 x 9 x 2 inch baking dish. Bake uncovered at 350 degrees for 35-40 minutes or until set and bubbly. Let stand for 10 minutes before cutting. Enjoy!

Homemade Mozzarella Sticks with String Cheese
16 oz String Cheese
1 ½ cups Italian breadcrumbs
2 eggs
2 Tbsp Milk
Oil for Frying
Marinara for dipping
Heat oil in skillet to 365 degrees. Whisk together milk and eggs in bowl. Dip string cheese in egg mixture, then breadcrumbs, then egg again and breadcrumbs again. Deep fry until crust is golden brown, about 1 minute. Remove from fryer and drain on paper towel. Serve with marinara sauce.

Did you know that its origins trace back to the second century B.C.? There is no specific date or person credited with inventing ice cream, however a recipe Marco Polo brought to Italy from the Far East was very similar to what we call sherbet today. It is believed that this recipe evolved into ice cream sometime in the 16th century.
Famous American’s like George Washington and Thomas Jefferson also enjoyed ice cream. Until the 1800’s ice cream was not readily available to everyone. It was mostly enjoyed by the elite. ½ cup butter
3 Tbsp Dijon mustard
1 Tbsp poppy seeds
2 tsp Worcestershire sauce
1 (12 count) package Hawaiian sweet rolls, split
1 pound sliced deli ham
8 slices Swiss cheese
Preheat oven to 350 degrees. Spray a 9x13-inch baking dish with cooking spray. Melt butter in a saucepan over medium-low heat Add mustard, poppy seeds, and Worcestershire sauce; cook and stir for 5 minutes. Arrange the bottoms from each roll in the prepared baking dish. Spoon 2/3 the sauce mixture over the roll bottoms. Add ham and Swiss cheese to each roll. Put tops of rolls over the Swiss cheese layer. Pour the remaining sauce over tops of rolls. Raw milk is milk that comes from cows that contains all the fat and has not been processed in anyway- it is raw and unhomogenized. Who can drink raw milk? Most anyone can drink raw milk. There are a few exceptions, infants should drink formula or mothers milk and those with compromised immune systems should drink pasteurized milk. If you are lactose intolerant you may be able to drink raw milk. Unheated raw milk contains its full amount of enzymes and lactose - producing bacteria needed by our bodies to breakdown and assimilate the milk sugar lactose. These helpful bacteria are killed in the pasteurization and homogenization process.
Raw milk safety: Like all milk, it must be kept cold. Raw milk kept at a temperature of 36 to 38 degrees can be kept very well for 4 to 5 days. Remember when buying your milk take a cooler along with ice or ice packs especially on hot days or when traveling a long distance .You may use your raw milk like any milk.

In history class we were all taught that the Pilgrims arrived in Plymouth in 1620 and celebrated the first Thanksgiving in 1621. Their menu would have been very different from what we think of as a traditional holiday meal today because they were missing one very important thing dairy cows. According to www.mayflower.com dairy cows did not arrive in Plymouth Colony until 1623. Imagine all the foods you would not have or be able to make without milk. As you enjoy your three servings of dairy products each day remember to thank a farmer. There was a time when milk and other dairy products were not readily available in America.
Here’s a recipe that’s great to make ahead for a family gathering.
Refrigerator Mashed Potatoes
9 – large potatoes
6 oz cream cheese
1 c. sour cream
1 tsp. onion salt
¼ tsp. pepper
2 Tbsp. butter
Cook and mash potatoes. Mix in all ingredient except butter. Place in bowl and put butter on top. Bake at 350 degrees for 30 minutes or until heated through. These potatoes can be stored in the refrigerator for up to two weeks.

Triple Berry Smoothie
1 cup frozen strawberries
1 cup frozen blueberries
1 cup frozen raspberries
½ cup strawberry or blueberry yogurt
2 cups milk
Mix the following ingredients together in a blender until smooth. Recipe makes two smoothies.

DIRT DESSERT
1 medium pack of oreos
2 packs of instant pistachio pudding
1 chocolate pie crust
1/3 of a cup of melted butter
1 1/3 cups milk
½ gallon of softened vanilla ice cream
1 cup whipped cream
Crush oreos and save 1/3 for topping. Mix remaining oreos and BUTTER. Pat in chocolate crust. Mix pudding with MILK, add ICE CREAM and WHIPPED CREAM. Pour in chocolate crust. Sprinkle remaining crumbs on top. Refrigerate 2 hours before serving or overnight.

Pre-heat oven to 350 degrees. Cook macaroni according to box instructions. Drain and add to large bowl. Mix in butter, 1 cup Monterey Jack and 1 cup Cheddar cheese. Empty into 2-quart casserole dish.

McAlisterville. I love spending time in the barn. My
favorite chores to do are feeding the new born calves, pushing up feed for the
milk cows and helping my Mamaw with the older calves.
September 7th is grandparent’s day. Many of you may have special memories of time spent on your grandparent’s farm when you were growing up. The farms of today may look different from your grandparent’s farm and you may think that there are not many family farms left. That’s not true 98% of farms in the United States are family owned and operated by families like mine. I’m lucky I am able to work alongside my parents and grandparents every day. So as you celebrate grandparent’s day remember there are a lot of grandparents working hard to provide milk and other delicious dairy products for you and your family. Here is one of my Pampaw’s favorite deserts:

July is the middle of the summer and it gets pretty hot out there. Take a look at this delicious recipe on how to make a banana split.
BANANA SPLIT
·1 banana, split lengthwise
·1 scoop each of vanilla, chocolate, and strawberry ice cream
TOPPINGS: chocolate syrup, marshmallow fluff, strawberry syrup,
whipped cream, chopped nuts, Maraschino cherries
PREPARATION:
Place banana slices against sides of long dish or bowl, place scoops of ice cream in a row between the banana slices. Put the toppings on however you would like, then add whipped cream on top sprinkled with chopped nuts and topped off with cherries. Enjoy!

June is Dairy Month but we also celebrate another important holiday. June 15th is Father’s Day. Every day Farmers like my Dad work hard to take care of their cows. He makes sure our cows have regular medical care from our vet, a diet balanced by a nutritionist and safe and comfortable housing.There are even times he has to get up in the middle of the night to take care of a cow that is having a calf.That doesn’t mean he gets to sleep in the next morning, he still has to get up at 3:30 a.m. when the alarm clock rings to take care of the rest of the cows.So as you celebrate Father’s Day with your Dad remember there are Dad’s like mine that work hard 365 days a year to make sure you have safe, delicious and nutritious milk.

1 lb. graham crackers
2 (3oz) boxes instant vanilla pudding
3 ½ c. milk
1 (8oz) cnt. Cool Whip
Frosting
2 T. oil
6 T. Cocoa
2 tsp white karo syurp

3 T. softened butter
1 ½ c. 10x sugar
3 T. milk
Butter bottom of 9x13 cake pan.Line with graham crackers.Mix pudding with milk. Blend in cool whip. Pour half of mixture over graham crackers. Then
place second layer of crackers over pudding. Pour remaining pudding mixture over this. Cover with third layer of graham crackers.Refrigerate 2 hours, then frost.

June is Dairy Month but we also celebrate another important holiday. June 15th is Father’s Day. Every day Farmers like my Dad work hard to take care of their cows. He makes sure our cows have regular medical care from our vet, a diet balanced by a nutritionist and safe and comfortable housing.There are even times he has to get up in the middle of the night to take care of a cow that is having a calf.That doesn’t mean he gets to sleep in the next morning, he still has to get up at 3:30 a.m. when the alarm clock rings to take care of the rest of the cows.So as you celebrate Father’s Day with your Dad remember there are Dad’s like mine that work hard 365 days a year to make sure you have safe, delicious and nutritious milk.
This is one of my Dad’s favorite deserts:
Éclair Cake
1 lb. graham crackers
2 (3oz) boxes instant vanilla pudding
3 ½ c. milk
1 (8oz) cnt. Cool Whip
Frosting
2 T. oil
6 T. Cocoa
2 tsp white karo syurp
2 tsp vanilla
3 T. softened butter
1 ½ c. 10x sugar
3 T. milk
Butter bottom of 9x13 cake pan.Line with graham crackers.Mix pudding with milk. Blend in cool whip. Pour half of mixture over graham crackers. Then
place second layer of crackers over pudding. Pour remaining pudding mixture over this. Cover with third layer of graham crackers.Refrigerate 2 hours, then frost.

Summer is almost here. Picnics are just around the corner, so it is very important to keep food safe to eat. It is very important to keep foods containing dairy safe. If your food is made with a dairy product in it such as; milk, cottage cheese, cream cheese, sour cream or any other dairy product remember these tips.
KEEP COLD
DO NOT LET SET OUT MORE THAT A HALF HOUR.
If setting out longer then ½ hour place in an ice bath and make sure the foods are not setting in sun. If the food feels warm to the touch throw it away and do not eat it. Better safe than sorry. One of my favorite snacks for summer and any time of the year is Oreo balls.
OREO BALLS
Li pack of oreoes
1 – 8 oz. pack cream cheese
Confectioner’s sugar or cocoa powder
Crumb cookies in food processer to fine crumbs. Mix in softened cream cheese till well mixed. Cool in refrigerator for 1 hour or till cool enough to roll. Make about 1 inch rolls with mixture. Roll in sugar or cocoa powder. KEEP REFRIGERATED.

Spring has arrived! Although the weather hasn't gotten the memo yet, here is a tasty recipe to take along to campfires or Easter potlucks that everyone is sure to enjoy! Also, always remember to have your 3 everyday of Dairy!

would simply allow the milk to set for a little while and the cream would rise to the top. Then she would skim the cream off the top of the milk and use it to make butter. The milk you buy in the store is homogenized, which means the fat
particles are broken up so they stay distributed throughout the milk instead of rising to the top. If you want to make butter, you will need to buy cream at the store. Heavy cream works best. In place of a butter churn you can use a
small jar or plastic container that closes tightly. Fill your container about ¼ full, close it and start shaking it. As you shake the container the fat begins to stick together. Eventually you will have a soft lump of butter in the liquid. The liquid is butter milk. When you taste your butter, it won’t taste quite the same as the butter you buy at the store. Commercially produced butter has salt added. I hope you have fun trying to make your own butter and don’t forget to get three servings of milk or other dairy products every day to help your body get the essential nutrients it needs.

Veggie Pizza
2 pkgs of refrigerator crescent rolls
2 8 oz packages of cream cheese - softened
1 pkg of Hidden Valley Ranch dip mix
Unroll and press the crescent rolls into one rectangle on a cookie sheet
Bake at 350* for 12-15 minutes.Cool
Meanwhile mix cream cheese and ranch dip mix. Spread on top of crescent rectangle. Then add veggies of your choice – carrots, peppers, onions, broccoli, tomatoes, etc. Top with shredded Colby Jack or Cheddar cheese.

Consider making this quick meal for supper and serving it with a glass of flavored milk that came from a farm where farmers like my Pop take good care of their

One of my favorite dairy products is cheese. I like it served in cubes as an afterschool snack, or melted in my macaroni and cheese. Here is a healthy mac and cheese recipe to help you save money and stay healthy.
Healthier Mac and Cheese
8 ounces whole wheat elbow macaroni
1 (8 ounce) package shredded reduced-fat Cheddar cheese
12 ounces low-fat cottage cheese
1 (8 ounce) container light sour cream
¼ cup grated Parmesan cheese
Salt and ground black pepper to taste
1 cup whole wheat bread crumbs
2 tablespoons butter, melted
1. Preheat oven to 350 degrees
2. Bring a large pot of lightly salted water to a boil. Cook elbow macaroni in the boiling water, stirring occasionally until cooked through but firm to the bite, 8 minutes. Drain
